OOGALI/UGALI/NSHIMA/SADZA

The most common staple starch of the Great Lakes region and Southern Africa. Made with maize flour cooked in boiling water to a stiff, dough-like consistency. Sort of like an African version of polenta only you eat it with your hands.

TANZANIAN RICE PILAU (PILAF)

Staple and national dish in East Africa! A one-pot rice dish cooked in a hearty broth, chicken pieces and fragrant spices. Good enough to eat alone.
